Ingredients
1 3/4 cup uncooked white rice
3 Tbs butter
3 heaping Tbsp onions, (chopped small)
2 cloves garlic, (minced)
2 cups chicken broth
1 10 oz can Rotel®
1/4 tsp ground cumin
1/4 tsp cayenne pepper
1/4 tsp pepper
1 Tbs diced jalapeños
8 oz salsa verde, (I used Trader Joe's®)
Instructions
In a large frying pan, melt butter over low flame.
Add onions and saute for 3 minutes and then add garlic. Continue to saute for 2 more minutes.
Pour rice into frying pan and cook until rice starts to brown, stirring often.
Once rice starts to brown, pour chicken broth, Rotel®, salsa verde, cumin, cayenne pepper, black pepper and jalapeños.
Stir, then cover and simmer, over low flame, for about 20 minutes or until rice is tender and liquid is absorbed.
